I started my collection of mauviel cookware on my first trip to Paris in 1976.sincethen I've amassed many pieces .their cookware is made to last centuries .since 1976 I have not burned anything .basically for 2 reasons the copper is responsive to quick temp changes and you cook at lower temperatures due to the even conductivity .their cookware isn't cheap however when I look back 4 decades it was and still is a good buy .during the cold winter months here in the Adirondack mountains of nys I cook on my wood fired cook stove . Since I can stocks ,veggies and fruits this pot works overtime and makes large batches quickly .during the summer months you can use it for corn on the cob ,lobsters ,clams and boiled dinners .if you are serious about quality for your money and have apassion for food ,it's a gotta have .
