dann12they are both good knives, in terms of quality to price , I prefer the Victorinox because it is more comfortable for me to hold. I have really big hands so that's the reason it is more comfortable to me than the stainless steel bolster which is too narrow for me and the lack of a finger guard also is uncomfortable. That being said my friends with normal size hands don't mind as much.
dann12VG-10 is a superior steel to that used on the Victorinox. Cutlery and more estimates the Fibrox at rockwell 55-56, while most VG-10 knives are 59-61, meaning they will take a finer edge and maintain it longer.
Fibrox knives are tried and true in professional kitchens, are easy to maintain, and hold up very well under very heavy use. VG-10 knives - found on Misono UX-10s and the Shun Classic knives, are also tried in true in professional kitchens.
While I haven't tried this particular brand, if I didn't have over 20 kitchen knives already, I'd certainly give it a shot - $35 for for a VG-10 blade is very reasonable.
