I'd suggest buying a charm pack (fabric cut into 5" squares) and sewing them up into a simple grid - no cutting and you'll get a great selection of different fabrics without having to buy a bunch. If you want to try something slightly more challenging the first time around, add some half square triangles. Simple, but they add a lot to a quilt. I started by watching Quilty videos on YouTube. Great for beginners and extremely helpful. Good luck, you'll love it!
