I'm going to echo the cauliflower rice recommendation. It's AMAZING. Here's an easy, really tasty idea. Get a bag of frozen cauliflower rice. Empty the bag into a microwave safe dish and cover and cook for the recommended time (usually about 6 minutes). Then, when it's done, let it sit for a minute, then empty into a casserole dish or a large glass bowl. Get some salsa of your liking and then dump some in (I'd say, 1 part salsa for 3 parts cauliflower rice). Mix it. Then, sprinkle in a bit of parmesan or romano cheese (being harder cheeses, they do better with this). Then mix that, pop the mixture into the microwave for a minute. What you basically have is a no-carb mexican or spanish rice dish that tastes incredible and is both very low calorie AND low carb. Filling, healthy and delicious. You can also add some sliced chicken. Best of all, it's very easy to prepare and quick. This is one of my go-to meals at least twice a week. Enjoy....
