justblamelaurelMy dad always makes turkey sandwiches for a few days after thanksgiving... Sometimes I join in. You can make soup out of the rest of the turkey including the bones, but most of the flavor in the bones will be gone after the first cooking... I would recommend a turkey dumpling or a turkey noodle soup.
You can make sweet potato pie if you have leftover sweet potatoes, but we never do and it's pretty similar to pumpkin pie anyways.
Your best bet is to make little meals and vacuum seal for future thanksgiving meals... My family always goes overboard and most of the leftovers go to the family members that are less fortunate.
justblamelaurelTurkey meat becomes very versatile if you treat it like a generic protein and build dishes around it. It's already cooked so think of dishes in sauces where it can be brought to temperature. Everything from Italian pasta in red sauce with cubed turkey, to sweet-and-sour turkey escabeche, to an Indian dal (lentil) curry that happens to have turkey in it too.
Or take it cold. Sandwiches, previously mentioned, are obvious, as are all its other similar forms like pitas and burritos. You can always put it in salads. It would look nice in a Cobb substituting for chicken.
