nkynightowlA cast iron Dutch Oven is the world's best stewpot, chile pot, soup pot. Like the cast-iron skillet it'll never destruct unless you severely screw up. I don't know anything about the fancy enameled type like Staub or I'm sure even rarer names that I'm sure make thoughtful wedding gifts. Plain cast iron, seasoned by your own generation or more of self-effacing culinary achievement... .

dutch oven to bake an awesome Tartine-style sourdough bread. With the pot heated to 450ºF, when I drop the dough into the pot, put the lid on, and return it to the fiery hot oven, the moisture inside the pot creates the atmosphere for an amazing oven spring. After about 20 minutes, I remove the lid (the loaf has inflated and the crust is forming) and bake until the crust is a deep mahogany colour.

RobertJBBravo, I'll pass this along to the baker-ess. I also forgot, world's best ragout and sauce pot for back-of-the stovetop (or oven) for long, lo-temp concentration.
