AdamBMilk or cream, butter, butter, butter. Sorry, I think dairy is vital to great mashed potatoes. I like a little bit of texture too, I don't make mine silky smooth.

AdamBI always season mine with salt, pepper, garlic, garlic salt, and parmesan with a healthy amount of half and half and plenty of butter. I always hand mash as well.

AdamBMake sure to use red potatoes too, better texture and skins if you leave them in.

AdamBHand mash, to where the potatoes look like sand and small pebbles. Add butter and half -n- half mash a bit more but don't over mash. Season with salt and pepper or to compliment your gravy or sauce.
