The mention of pizza stones above reminds me: I had a pizza stone once, and oil/grease soaked into it and turned rancid and I wound up throwing it away. What was I doing wrong? Was it just that the stone was too cheap?

SWMBOI guess you could just cook it off by leaving it in the oven and waiting until any liquid oil or grease had combusted or vaporized.

SWMBOWas it hot enough (pre-heated hot enough, for long enough)? Did you leave anything on there after it cooled, or let something else bake on top of it and grease dripped onto it?
I've never had grease soak into mine. I always preheat to 550F for 45 mins.

SWMBOYou don't have to preheat it as high as I do (some ovens don't even get to 550F), but you want to make sure it's hot all of the way through before you put dough on it.
Also, you always have the option of using parchment paper (get the pre-cut stuff, it's super convenient and you want a little extra around the edges anyway) -- to do this, put parchment paper on your pizza peel, and then roll out the dough onto it and build your pizza there. When you slide the pizza onto the pizza stone (after it's preheated), your dough will probably stick to the parchment paper (at least, it does for me) so you can slide the two onto the pizza stone together. This method has an additional bonus of making it easier to slide it onto the pizza peel when you're pizza is done baking.

SWMBOI would guess that you were leaking some oil onto the think. Burning it off will produce smoke, so it's generally better to keep the oil off it, unless you use it on your grill.
Parchment paper would be a good way to keep your stone clean. But steels work better and are nigh indestructible if you use them according to directions...
