But what can you do with this once it's built, i.e. does it serve any function other than educational value?

EuphoniaYou could use it as an oversized and overpriced 555 chip. Also, I'm sure it wouldn't perform as well as an actual IC due to the added capacitance from the board and the passive components, but at low frequencies that shouldn't be much of an issue.
