I know this is a cheap AF set. And I do need a set soon. But what is the steel here? I eventually need 3 sets.

BrainFlushWhen it doubt, buy something else. I hate it when knives don't list the steel type. Sometimes medium to high end knives won't list the steel type because it's a specific formulation for that maker, but that is certainly not the case here. For cheap knives its mostly just a scam.
Anyways, there's maybe an 80% chance the steel is either 440A, which is garbage, or 5Cr15MoV which is the Chinese version of X50CrMoV15 and might also be garbage.
440A is what Cutco uses and I don't think I have to say more about that.
X50CrMoV15 is the single most common knife steel and is used by Wusthof, Zwilling, etc. It's decent enough with a good heat treatment, but you should assume that is not the case for the knives being sold here.
