I'm pretty new to mech keys but I do have a mechanical keyboard.
What makes these switches so popular and what differentiates them from other keycaps? I'm pretty confused right now. Thank you.

b_sandSwitches are what we feel when we're pressing the keys on the keyboard. There are different kinds of switches (Cherry MX, Gateron, etc etc) and they're not keycaps. I assume what you want to know is why this keycap set in particular is popular.
Unique keycap sets are mostly available on Group Buys where you buy together in a group and pre-order it. Most of the existing keycaps (that went through group-buys) would never be available to be ordered again (or maybe yes, but will be available in a long time). Personally, I think this keycap set has a very nice aesthetics while also using PBT plastics (There are 2 kinds in general, ABS and PBT, you need to Google the differences I guess. It's all a matter of preference).
IMO, keycaps set groupbuys (massdrop's drops) are popular because of the aesthetics like how people can like some phones/clothes/etc etc because they look pretty. Also, most of them are limited-running products. That's why when this kind of thing pops up, everybody just kind of jump into it

That is the only reason why I bought into this to try it out for myself. Placed upon normal 104 keyboards as well as freaky 65's.
