Construction is pretty much the same like you would expect. The cord on the EMU is very similar, still kind of goofy long, nice nylon jacket, but not quite as thick as the X00. The 3.5mm plug with threaded 1/4" adapter offers more utility than, but does not feel as nice as, the hefty 1/4" plug on the Fostex.
So, the interesting part -- the sound. I'm not an audio engineer or hi-fi reviewer, I'm just a guy who likes music. I hear more similarity between these and the X00 than I hear difference. The low end on the EMU does seem to go lower and louder, and there is maybe a little more brightness at the top end, but depending on the music there may not be much of an obvious difference. With some piano-based pop (Harry Nilsson's Nilsson Schmilsson and Randy Newman's Little Criminals) I was having a hard time picking out much difference that I could be sure I wasn't making up in my head in the time it took to switch headphones. Ditto with symphonic (Moondog's 1969 Columbia album)
Where I did notice some more obvious difference was with the increased bottom end on some stoner metal records (Red Fang, We Hunt Buffalo) and pop and electronic (Carly Rae Jepson, Nero, Crystal Method). XTC's English Settlement, which already has a lot of bass in the mix, now has a LOT of bass.
As a more general impression, I think the X00s seem a little livelier while the EMU has a little more oomph for rock and metal. They're both great sets of phones and at a similar price point I really don't feel like there's all that much between them.
Just first impressions, and obviously I can't speak to the teak or rosewood versions, but hopefully someone finds all this useful :)
