Is it possible to run 3 1080p monitors off this at once? Or perhaps 2 from the dock, and a 3rd from a video card at the same time?

doubt it, 5gbps is too low i wish this was thunderbolt 3 (40 gbps)

I don't know of really any docking stations running 3 monitors at all. This specifically says dual, up to 4k.

This will work with 2x 4K monitors as I have tested it for over a week now. You can still max out however many ports is on your internal graphics card. This device does not tax any resources from your graphics card.

If this device does not tax any resources from a graphics card, there can be a lag? right? I would like to use my graphics card to deliver signal to my monitors. I have two 2K monitors with a 2017 MacBook Pro 15. Will it run my monitors natively? Thanks!
