I wanted this knife really bad, Axis lock is my favorite mechanism. But that colored inner liner ruins it for me. Colors are fine, but when it's the only option it really limits those it appeals to. Hopefully Gerber offers an all gray option. Otherwise this looks like a really promising knife.

ecolemanIt's a ceramic powder coat (usually there's an anode involved in that but most folks don't call it 'anodizing', YMMV) and I'm pretty sure whatever's underneath it isn't stainless.
You'll probably be reaching for the Rustoleum to recover it if you strip the covering off. You'll want to mask the pivot area (like Gerber didn't) and probably lube it with something greasy that'll stick to all the exposed metal and keep it from corroding. If you don't mask, their cheap brass washers will just abrade the paint off and turn the lube into a mildly abrasive slurry with repeated use.
Which is to say I think it's doable as a project but whoever does it needs to post pics for the rest of us :)

ecolemanAnodizing or Powder coat preserve aluminum from oxidizing. If you actually carry this, that would not be good. I bought it btw and it's decent for the price but that thin handle at one end is just not comfortable and also harder to have a place for your pinky when you open/close so more chance of accidentally nicking yourself if you open/close one handed.
