GronchoYou wont have to address the hollow directly .... you put on a bevel or convex same as you would a straight beveled blade... using whatever method you're using normally. all you're doing is the edge work.... the blades geometry is set as a hollow grind already( this knife from photo looks to me not to be hollow ground though BTW..... )) by the maker and doesn't require any more attention. just don't make the edge too obtuse.... shoot for thin initially, this steel is strong and holds a super sharp edge due to the fine vanadium carbides and will hold up to hard use.... if you damage the edge too quickly in use, then drop your inclusive angle a couple degrees to make it stronger for heavier use... PRN.
