How do I sharpen this knife?

I'd recommend using a sharpening stone. Don't use those plastic/steel knife sharpeners which you pull the knife through. The angle of the blade is too narrow for those sharpeners and they remove too much steel, which will shorten the life of your blade.

Same way you would sharpen any knife.
Can I use this knife to cut anything besides vegetables?

In the end, a knife is a knife. You can cut anything with it. The flat tip just makes certain precision difficult.
How well would this work on winter squashes (spaghetti, butternut, etc) with their hard rinds?

As long as you cut it properly, very well.
