Last time I made turducken the instructions called for it to be tented or covered For part of the cook.

For sure. Try a lamb shoulder for five hours slow roasted and the outside will be pretty dry unless it gets covered.
(not so tempted to buy this for roasting but blind baking could be a good use.)

I prefer crisp skin over rubbery skin..no tinfoil except maybe wing parts.
