How would I know which keyboards these keys are compatible with? Or it is keycap compatibility determined by switch types (in this case, cherry MX)? Are most keyboards compatible with cherry MX switches? So for example, if I started with a Drop Entr mechanical keyboard and wanted to use these keys, what I would need to do is replace the default switches with Cherry MX switches, and then push down these keycaps on top. Are there any keyboards that come with Cherry MX switches by default?

This set of keycaps is compatible with your DROP ENTER, cherry mx style is the standard for the vast majority of switches on the market, cherry, gateron, kailh, jwk, tecsee, etc.

Yes, the keycaps are compatible with the switch. The way to tell if they're compatible is to look at the type of stem on the top of the switch. The majority of switches, and by extension the majority of keycaps, use the Cherry MX style, which is a thin + shaped center stem. For a comparison, look up Logitech Romer G switches. Those have a big box shaped stem that takes up the entire top of the switch. Those would need special keys made to fit those switches. So look at your switch. If it has a + shaped stem, which it should if it's a Drop Entr, then that is a Cherry MX style switch, and you are good to go.
