Massdrop has offered some very nice kitchen knives. In our kitchen we have some Shun knives that served us very well and hold a great edge. If I had my preference, I would much prefer a good set of carbon steel (not stainless) knives. I have a couple vintage carbon steel knives which I use at the fire station. They are easy to sharpen and hold a keen edge. If money was no object a hand made knife from Mr. Bob Kramer would be the cat's meow. IMHO.

FourdayWhile it requires more care, I feel like all good knives should be taken care of in a similar way, and I already treat them that way. I'm still searching for the right one.
b9d9ffdad3ac59e7f6fyou are so right, with the right care a knife will have a much longer life than its owner! I have a few really cool "old" knifes that I have acquired over the years I really wish I knew their history. I also started buying knifes as I could afford them after I would do a event or catering job when I was first getting started cooking and now these are some of my favorite knifes because they are little mile markers of my culinary journey. do your research, know what you want but what it all comes down to is how it feels when you pick it up!
