For those of you who have multiple cooks in the house, do you have 1 chef/ santoku knife that everyone uses or multiple? My partner and I cannot agree on 1 chef knife...His hands are much bigger than mine and that in of itself seems to throw everything else off...shape of the handle, length, weight distribution...we just can't agree...

Deadly_PeanutI am not faced with this dilemma, at least yet, but it is absolutely essential you both use knives that are comfortable in your hands. This will help prevent accidents and allow for better use and maneuverability of the knife.

Deadly_PeanutI live with roommates who all like to cook. We each have our own chef knives even though we are all happy to share each others. I consider picking out a chef knife like Harry Potter choosing his wand; it has to fit you.

Deadly_PeanutMy partner loves and uses the Farberware Santoku they bought ages ago when they were starting out. It's a nostalgia thing but it works well enough. It's taken care of, honed every other time, sharpened about once a year. It doesn't cut like my knives do but my partner doesn't want to use my knives because they're sized for my smaller hands. The Farberware is huge to me and I can't stand it. It really is a personal preference.

Deadly_PeanutMy wife used to sell Cutco, she insists on using them and only them.
I am fine with that, because my carbon steel knives need to be cared for, you can't wash them and let them air dry. (Which she would do, leaving me with rust stains to deal with...)

Deadly_PeanutI have bought knives specifically for my wife and she doesn't really care to use them. She chooses one of our worst knives, almost every time. I want to throw it away, but I know it is what she is comfortable with (even though it is so terrible). Some of the other comments are spot on. If it is going to be your daily go-to knife, you will end up choosing it yourself. Even if it is extremely sharp, well balanced and perfectly weighted, that may be only in reference to what you believe. Someone with smaller (or larger) hands might think it sucks...
In other words - go knife shopping together. Don't pick one out for your significant other, unless you already know what they are comfortable with. It actually works out better; at least you aren't fighting over the same knife.
