Many good points but a total "Amen, Brother" on the using weights over dry measures. I wish all recipes were written this way and convert my regular recipes to weights. I have two scales. One for larger amounts and another for small amounts like a teaspoon of herbs. Just buy two different brands of dry herbs and weigh a teaspoon of each. You will be shocked by the difference. Thanks, for pointing this out, Chef.
