I would love to have some of the Japanese knives listed. I didn't vote for any because they're finished at a different angle than Western knives. I invested in a sharpener which is correctly angled for Western knives, and after using the honing steel it's keeping my Wüstofs & Henckels in tip-top shape. Don't want to go back to a sharpening stone for Japanese knives, & I'm very likely to screw up - 15 degrees is a very narrow angle!
