I'd like to just see the PCB and case or just the PCB. The electronics are easy to come by and I can get them for cheap. Plus I can make my own case, but don't trust myself making my own PCB.

Right now the scarcest component is the case. I would buy a few if they were available individually.

Since I love the look of this keyboard but can't really solder etc., I'd prefer a pre-assembled option. I was about to vote in the poll and say "Full Kit", but should I add "Pre-Assembled" as a separate option?

Might want to monitor https://www.massdrop.com/buy/ergodox :) . I forget how long each drop has taken on average... but I believe there's been about 4 so far, since they started.
