Day hiking? How much stuff do you bring on a day hike? I bought the exos 48 and will be using it on weeklong trips, and I am FAR from an ultralight backpacker. May be a good time to rethink your gear...

I would interpret a '2-day' pack as around 40-50 liters for a backpacker just learning about going light. It seems more useful to talk about the CAPACITY of a pack, rather than days it might be useful for. It varies on how UL you are, or what activities you might be doing (photo, packrafting, limited mountaineering...)
My friends who are more into this than me, a 50 liter pack is probably the biggest one they use. Some can get away with a 35 liter for a 1-2 night trip. Awesome!
2-day backpacking pack's. I think that 40+ liters is suitable for that.
Are those meant to be day hiking packs? Or 2-day backpacking backs?
