Am I correct in assuming any carbon steel is without a nonstick coating?

mjdobsoncorrect. you season it like you would cast iron and it develops a non stick coating through use. Deep frying in it really helps develop this coating!

mjdobsonNot "any", but yes this one does not have a nonstick coating. It does have a protective coating to prevent scratches while shipping that is easily removed (you boil water in it and then wash it according to the instruction booklet).
I got the nonstick version of this from MD a couple weeks ago and it is also carbon steel. (I'm also quite happy with it.)
