Can these speakers be set up to provide left/right stereo separation in a room?

Yes. They connect to each other wirelessly to give a stereo pair leaving the user to connect source either wirelessly through bluetooth or via any of the rear inputs on the left speaker.

Can you use them as wireless surrounds? Is there a device that would connect to a amp's rear pre-outs that would transmit directly to them?

Yes, there are such devices, but I can't tell from the description if this is Bluetooth only or if it has a True wireless option too. It communicates only thru SBC Bluetooth codec, which is not the very best.
