The steel used in this knife is much better than I was expecting. Takes and edge and does a great job of keeping that edge. The knife has a really nice heft to it so don't expect a super light knife. The shiny surface will get cloudy if you use abrasive sponges, though. Overall I'm very impressed.
These knives are very comfortable to use and cut well. They're very beautiful. I find them most useful for slicing/dicing vegetables or smaller portions of meat on a cutting board, which they accomplish with very little pressure in addition to their own weight. I have other knives for that purpose but tend to reach for these. They're a little large and scary for paring. My only knock is that the metallic sound they make (when they touch a plate or the counter) sounds tinny, but that's hardly a criticism of their worth as knives.
