When you’ve been in business for nearly two centuries, you’re doing something right. Established in Massachusetts in 1837, Lamson is the oldest cutlery manufacturer in the United States. Featured here are two of the company’s most ergonomic blades: the 12-inch ulu and the traditional ulu. Designed for a rock-and-chop motion, these knives can breeze through vegetables and herbs with blazing speed. The blades are made from 420 high-carbon stainless steel that's vacuum heat treated to optimal hardness and tempered for strength. The result is an edge that holds up but isn't too difficult to sharpen when it comes time. Natural walnut wood is used for the handle, which will differ slightly from piece to piece given the varied nature of the wood.
