My first thought is food safety. Is it really a good idea to keep food warm for 7 hours? How do you keep from breeding loads and loads of bacteria? I like the concept, but this aspect gives me pause.

bodrellthis is hardly some rare practice. people bring hot lunches every day without issue. cook your food first (to kill the rare bacteria that might cause issues), and clean your utensils and the vessel itself, and you'll have no problems. its only certain rare foods (like hollandaise for example) where things like undercooked eggs are involved, that you need to worry about.

bodrellBacteria generally multiplies fastest between 5-60 degrees Celsius. As long as food is preheated to 85 degrees Celsius for 3 min or 100 degrees Celsius for 30s and kept outside the range (0-65 degrees Celsius) it should be safe for at least a few hours. I think the term is denaturing or inactivation of the bacteria
