I have one single induction burner in my apartment, and this pan is perfect for it. Covered, I can essentially bake things. It does hotspot a little, but that’s more an artifact of me having an induction top and inevitably cracking the egg into the pan within fifteen seconds. I rinse it with water or wipe it out hot with a kitchen towel for care and after nearly a year the nonstick finish in the center only has the faintest hint of a non-new color. Nice big size for making food in. No handle wobble or finish flaking. Pleased with my purchase.
Balanced, even heat, great non-stick. Lid fits snug - pretty much everything you need. This is not cast-iron and you won't use it the same way either. A smaller version would be very useful for those "I only want 1 egg" mornings. Also works well with my induction stove :)
When I switched to induction stove I had to get rid of all my old aluminum non-stick pans that didn't work. But I missed it for a few things, like fried eggs, omelettes, and searing sous vide salmon. Sometimes my cast iron works ok for these, but not always, and the fishy mesh when the fish decides to stick isn't worth it. The Viking is a quality non-stick which works great on the induction --- heats up fast. Had a great experience with fried eggs and some seared salmon, and easy to clean with a wet paper towel. Love it.
