Best multi purpose kitchen knife I’ve yet owned and the 8 inch big brother is of the same calibre. Has now had 2 years daily use and sharpened using spyderco triangle unit. As bright and present as when new. Highly recommend knives, if a 10 inch version comes around I’m in.
Sharp out of box, super light. Got both knives figuring the wife might like em over the bigger knives I use. Stays decently sharp, have only stropped on balsa and bovine occasionally. Not a huge fan of the hammer finish, but overall happy.
Real nice, Beautiful blade. The San Mai line is beautiful, and the mirror polish on the blade is a looker. Pretty sharp OOTB but it is pretty clear that you could get it screaming sharp with a little work. The handle is nice but had a few sharp points. Not a huge problem, and a bit of fine sand paper took care of that. The edges of the spine and choil are also a bit sharp, but nothing too bad. For the 50 bucks I paid for mine, I am very happy with this purchase.
The blade is nice and sharp. However, the metal connection part between blade and handle is quite rough. And the handle has a pretty strong chemical odor. Overall it is worth the price but not very detailed, don't expect the craftsmanship to be on par with other brand such as Tojiro.
I love mine, got the petty, reach for it for most kitchen tasks and clean it immediately after use. Rarely need to sharpen, very good edge but I'm very careful with it since sharper, harder edges chip easier. I keep the box around for when I want to take it places I am planning on cooking.
