Made in Seki City, Japan, these Kagayaki damascus kitchen knives are constructed from a traditional hammer forging process. Heat treated to a Rockwell hardness of 63, the blade is made from nickel damascus with an R-2 core, giving the knives excellent cutting performance. R-2 is a fine-grained, high-speed powdered steel known for its edge retention and rust resistance—a devastating combination for kitchen tasks. The handle, made from black pakka wood, is smooth to the touch but provides a secure grip for stability next to a steamy grill or a wet sink station.

The Petty knife is good for trimming smaller cuts of meat and vegetables. With a slim 6-inch blade and tapered point, it can handle detailed cuts, too. The Santoku features a deep-bellied 6.9-inch blade with a long curve for chopping. The blade’s shape makes chopping large quantities of food quick and easy, and its wide handle helps to maintain a steady grip. The Gyuto, with its 8.2-inch blade, is the largest in the collection. It’s designed for heavy-duty kitchen tasks like chopping large cuts of meat and ripping through thick-skinned fruits and veggies.
