Burja is a Slovenian word for the cold, dry gusts of wind that hammer Italy from the Northeast. These winds provide the perfect climate for ageing prosciutto, the dry, Italian cured ham known for its savory depth of flavor. Aptly named, this knife is designed for precisely slicing prosciutto from any region of the world. Thanks to a long, slim blade, it makes cutting uniform paper-thin slices easy—and it can do so just as easily with other meats and fish as well. The blade is constructed of Japanese Aichi 1K6M VM steel, which is fashioned into a single thin layer to promote blade flexibility. The handle is made of black Japanese pakkawood for a comfy hold and lasting build. Stored in a wooden gift box, this slicer is built for precision.
