I hate using stainless knives. Hard, but also hard to sharpen. Seems "stickier" too on the food. Prefer carbon steel and maybe San mai w/ stainless on outside. Other problem is the hard carbon steels are also prone to chipping.
KrustyboomerVg-10 is really wonderful to sharpen though. It is forgiving, takes a great edge, and doesn't take too long to touch up. I can't comment on "stickiness", but I would think that would have more to do with the finishing than the steel.
fhoodIn general, stainless and aluminum are less self lubricating due to grain structure. One reason you need anti seize compound on those kind of fasteners.
I much prefer carbon to stainless. Only thing stainless has going is you can be lazy in your treatment of it
rdodevI’ve owned some of these knives for years. They are every bit equivalent to the Shun brand knives with VG-10 steel core. Nice quality, Japanese style knives made with good materials. I do advise checking Amazon and elsewhere on the internet because sometimes you can catch them as cheap or cheaper other places. Especially, once you factor in shipping.
Wait, how are there 67 layers to the steel? You can't get to 67 (a prime number) by repeatedly doubling any number (as in the case of repeatedly folding 2 or more layers of steel). Did they do something like a san mai as well? I'm just genuinely curious. This would be a steal at the price if that's the case.
Stuart-Monki believe most of the super steel kitchen knives are san mai. VG10 only being the center and cutting edge of the knife. with softer variants around to get the damascus design.
