If it is really Induction compatible it must have a ply type construction that includes a ferrous layer. Hopefully someone from GreenPan can comment and clear this up.
I'll stick to my cast iron. It's not sticky to clean up and it builds layers of seasoning. Not to mention it's virtually indestructible. $70 is a lot to ask for a pan that can easily be substituted by a $10 thrift store cast iron pan.
wibblesMy guess it's ceramic coatings, basically a slightly higher quality version of non-stick coating giving its high price. I used many these ceramic coatings pan in past, they all worn out eventually.
