Crafted entirely out of stainless steel, the Kanetsugu Pro-S Kitchen Knives are durable and pleasing to the eye. The blades are made from AUS-8 high-carbon molybdenum stainless steel. Sub-zero quenched and refrigerated at -70 degrees Celsius during the heat-treatment process, they’re exceptionally sharp, tough, and strong. As for the handles, they’re made from 18-8 stainless steel, which is widely considered more sanitary than wood and other materials. Cut with a diamond lattice pattern, the knives offer solid grip retention in wet and hot kitchens, when you need it most. For smaller cutting tasks, opt for either of the petty knives. For chopping large amounts of vegetables and herbs, go for the Santoku. Finally, on the large end is the Gyuto, which is great for slicing large cuts of meat and poultry.
