Designed by Bob Kramer, who boasts nearly 20 years’ forging experience, this knife is an exact replica of the straight carbon steel blade he makes in his Olympia, Washington workshop. Made from straight carbon steel with a Rockwell hardness rating of 61, the blade offers remarkable edge retention. The shape is very wide, which lends itself to knuckle clearance for chopping and allows you to transfer food with ease. The handle, made from Grenadille wood, is contoured to fit nicely in the hand and fitted with a decorative mosaic pin. Made in Japan’s cutlery capital, Seki City, the knife is hand-finished by Japanese artisans with a three-step process.
