I picked up the 7" cleaver recently on Amazon after seeing this similar drop but it not being available :(https://www.massdrop.com/buy/zhen-3-layer-vg-10-forged-kitchen-knives)
It's a fine knife - and the shape is quiet functional. It arrived very sharp. That said, it didn't retain it's edge as well as I'd hoped (for comparison I have some German made German steel knifes that held an edge longer). It's also thick & heavy - given that it's a cleaver I don't know that I can quite fault it in this regard, but I suspect they could have gotten away with 20-30% less steel and maintained a similar function.

Nice looking knives but 56 HRC seems a little low? Not to mention that well known brand/steel: German High Carbon Steel. Has anyone used these knives before?

From the images, you can see the blades are marked with 1.4116, which is also known as X50CrMoV15 or 420MoV. It's a widely used steel for kitchen cutlery. I have a Wustof and a Boker knife with this steel and they work just fine.
