The 8.25-inch blade is made from 34-layer VG-10 Damascus steel that’s hardened to up to 62 on the Rockwell scale. The result is a super-hard blade that effortlessly cuts paper-thin slices. Complemented by an octagonal ebony wood handle, the knife is easy to control, despite its lengthy profile. The handle has been CNC’d on a lather with a copper ring to make sure it meets the demands of sushi chefs the world over.
