Maybe a dumb question but worth a clarification to me: m9xx mentions "2 channels driven" power output, does that mean each headphone out being driven or just a set of headphones being powered?

2 channels driven means that the power measurement is taken while the left channel and right channel are each driving a load. While the power specification is for one channel of the amplifier, both are working simultaneously which taxes the amplifiers power supply more. Some manufacturers will specify power with only one channel actually driving a load which is a less realistic scenario when you consider that stereo music rarely has sound in only one channel.
We make these measurements with standardized fixed resistors and not actual headphones and we just use one headphone output jack on the m9XX.

So it appears that my sensitive Westone UM1 can pick up odd sine waves which coincides with the dimming and lighting of the 7 segment display when the m9XX is muted. Is this normal behavior for the m9XX when muting?
DeathbyMusicMy unit does the same and I can pick it up with my UM 30 Pros, I guess it's normal, not very audible with other pairs of headphones even cranking up the volume.

The dim mode uses a pulse width modulation scheme to lower the brightness of the display, this is slightly audible with very high sensitivity devices.
