Product Description
AUS-8 stainless steel is traditionally used in folding knives, but it makes a strong play in the Mizu chef’s knife. Featuring an 8-inch blade that can just as easily slice through a side of beef as it can mince garlic and chop onions, this all-purpose edge is ready for any meal Read More

Very curved but nice quality
The blade has a pronounced curve towards the tip that can take some getting used to but it is a very well made knife

As a retired chef I have had the opportunity to use a wide variety of cutlery and while I mainly use Japanese knives I decided to give this one a test. I’m always looking for reasonably priced knives to give as gifts or recommend to friends. I found this knife to be a hell of a bargain. The handle has nice heft and fills my above average sized hands nicely. The balance is great and this thing is stupid sharp right out of the box. The only thing that could have been better would be a full tang but I have other knives to use when doing any work that might stress the partial tang here. The stainless AUS 8 isn’t my first choice for kitchen use but it is nice for processing acidic foods. Well done.

Straight blade, good fit and finish, thin, even grinds, arrived razor sharp, and is holding up well to moderate household use. The knife is light and the handle is comfortable. AUS-8 is no super steel, but it is easy to sharpen and takes a very keen edge. For the money ($36 when I bought it), this is an excellent knife and significantly better than most in the same price range. If you like the blade profile, I think you would be pleased with this knife.

Great knife for the price that I got it for!

For the price it's a great knife. Holds an edge for a couple of weeks, a light sharpen and it's back.

The knife keeps a good edge and it is well balances. Some people worry that it isn't full Tang, but most Japanese knives are not. It's really a non issue unless you start chopping wood with it. My knife is starting to patina I think. Either that or it's rusting, but I don't take too much care of it. Would recommend.
