Am I the only one who would feel a little awkward 'taking a knife to the flag'? Of course, I'm partly kidding. In reality, if made right, it'd hold up good, and wouldn't look any worse than flags that wear from flying over time.

Mind if I ask some questions? I found an unused Ironwood board. The hardness rating obviously is through the roof. Should I avoid it? Should I be looking at sub 2000 Janka woods? I'm in a resturant and hand washing after every use is not an issue. I did save your other drop you had here. So I am interested in your stuff. But I just want some practice and maintenance before I really invest in a good board. Let me know if I'm reaching too far. :D

BrainFlushWe have sold plenty of our staggered board which uses jatoba, a very hard wood, with no complaints. You may need to sharpen your knife a little bit more but we feel the harder the wood the sturdier the cutting board. We want our product to last because you are spending your hard earned money on it and we take pride in making it.
