I purchased the 8" Chef's knife and Utility knife. They are both of a nice weight and balance, and they maintain their edge well. They can easily stain if they are not cleaned quickly after each use.

The santoku is an incredibly versatile knife. The pairing knife has a nice fat belly and a nice nook for your finger to sit while pairing. The steel on these knives is amazing, incredibly hard, very tough, and takes a very sharp edge. I've never had corrosion issues with any knives, and these stay true to that. I'm very impressed with the steel and I'd like to see more knives made with it. I'm also a huge fan of the santoku design it works as both a santoku and a european chefs knife uncompromising for both uses. I use the santoku more than any other knife, even when you typically wouldn't use a traditional santoku. The only time I use a different knife is when I need to bring out my larger chefs knife. Unfortunately I do not have the Dragon chefs knife, as I have a VG-10 convex grind 9" Gyuto knife. However I still use the santoku more often, and honestly I think most people would be well off just using the santoku and pairing knife for everything. I purchased a second set for my parents as a holiday gift. They use these knives more than anything. These are my favorite set of knives.
